(iii) Not more than one unit per container may be mashed.

(6) Crushed. (1) Not more than 14 percent of the drained weight may consist of fragments bearing blemishes, including seriously blemished fragments.

(7) Half sliced. (1) Not more than a total of 20 percent, by count, of the units may be slightly or excessively trimmed: Provided, That not more than 72 percent, by count, of the units may be excessively trimmed, but in any container having not more than 10 units, one unit may be excessively trimmed; and in any container having more than 10 units but not more than 27 units, two units may be excessively trimmed;

(ii) Not more than a total of 8 percent, by count, of the units may be blemished or seriously blemished; or one unit in a container is permitted to be blemished or seriously blemished if such unit exceeds the allowance of 8 percent, by count: Provided, That in all containers comprising the sample such blemished units do not exceed an average of 8 percent of the total number of units; and

(iii) Not more than one unit in containers of 25 units or less, and not more than 3 units in containers of more than 25 units, may be mashed.

(8) Broken sliced. (1) Not more than 10 percent, by count, of the units may be excessively trimmed;

(ii) Not more than 8 percent, by count, of the units may be blemished or seriously blemished; and

(iii) Not more than 5 percent, by count, of the units may be mashed.

(e) (C) classification. Half sliced or broken sliced canned pineapple that is fairly free from defects may be given a score of 14 or 15 points. Half sliced or broken sliced canned pineapple that scores in this classification shall not be graded above U. S. Grade C or U. S. Standard, regardless of the total score for the product (this is a limiting rule). "Fairly free from defects" means that half sliced or broken sliced canned pineapple is fairly free from any defects not specifically mentioned that affect the appearance or edibility of the product; and, in addition, has the following meanings with respect to, and applies only to, the following styles:

(1) Half sliced. (1) Not more than 72 percent, by count, of the units may be excessively trimmed, but in any container having not more than 10 units, one unit may be excessively trimmed;

and in any container having more than 10 units but not more than 27 units, two units may be excessively trimmed;

(ii) Not more than 122 percent, by count, of the units may be blemished but in any container having not more than 5 units, one unit may be blemished; in containers having more than 5 units but not more than 10 units, two units may be blemished; and in containers having more than 10 units but not more than 32 units, four units may be blemished; and

(iii) Not more than one unit in containers of 25 units or less, and not more than 3 units in containers of more than 25 units, may be mashed.

(2) Broken sliced. (i) Not more than 15 percent, by count, of the units may be excessively trimmed;

(ii) Not more than 121⁄2 percent, by count, of the units may be blemished but in any container having more than 10 units but not more than 32 units, four units may be blemished; and

(iii) Not more than 5 percent, by count, of the units may be mashed.

(f) (SStd) classification. Canned pineapple of the applicable styles which fail to meet in some respects paragraph (c), (d), or (e) of this section may be given a score of 0 to 13 points and shall not be graded above Substandard, regardless of the total score for the product (this is a limiting rule); and, for the applicable styles, may also be "Below Standard in Quality-Good Food-Not High Grade" or "Below Standard in Quality" for the following reasons:

(1) Sliced. (i) "Excessively trimmed" for failure to comply in part with paragraph (d) (1) (i) of this section;

(ii) "Blemished" or "contains blemished pieces" for failure to comply with paragraph (d) (1) (li) of this section; or

(iii) "Mashed units" or "contains mashed units" for failure to comply with paragraph (c) (1) (iii) or (d) (1) (iii) of this section.

(2) Tidbits. (i) "Excessively trimmed" for failure to comply with paragraph (d) (2) (i) of this section;

(ii) "Blemished" or "contains blemished pieces" for failure to comply in part with paragraph (d) (2) (ii) of this section; or

(iii) "Mashed units" or "contains mashed units" for failure to comply with paragraph (c) (2) (lii) or (d) (2) (iii) of this section.

(3) Chunks. (1) "Blemished" or "contains blemished pieces" for failure

to comply in part with paragraph (d) (3) (i) of this section; or

(ii) "Mashed units" or "contains mashed units" for failure to comply with paragraph (c) (3) (ii) or (d) (3) (ii) of this section.

(4) Cubes. (i) "Blemished" or "contains blemished pieces" for failure to cumply in part with paragraph (d) (4) (1) of this section.

(5) Spears. (1) "Excessively trimmed" for failure to comply in part with paragraph (d) (5) (i) of this section;

(ii) "Blemished" or "contains blemished pieces" for failure to comply with paragraph (d) (5) (ii) of this section;

or

(iii) "Mashed units" or "contains mashed units" for failure to comply with paragraph (c) (5) (iii) or (d) (5) (iii) of this section.

(6) Crushed. (1) "Blemished" or "contains blemished pieces" for failure to comply with paragraph (d) (6) (i) of this section.

(7) Half sliced. (1) "Excessively trimmed" for failure to comply in part with paragraph (d) (7) (1) or with (e) (1) (1) of this section;

(ii) "Blemished" or "contains blemished pieces" for failure to comply with paragraph (e) (1) (ii) of this section; or

(iii) "Mashed units" or "contains mashed units" for failure to comply with paragraph (c) (7) (iii) or (d) (7) (iii) or (e) (1) (iii) of this section.

(8) Broken sliced. (1) "Excessively trimmed" for failure to comply with paragraph (e) (2) (1) of this section;

(ii) "Blemished" or "contains blemished pieces" for failure to comply with paragraph (e) (2) (ii) of this section; or

(iii) "Mashed units" or "contains mashed units" for failure to comply with paragraph (c) (8) (iii) or (d) (8) (iii) or (e) (2) (iii) of this section.

§ 52.1725 Character.

(a) General. The factor of character refers to the degree of ripeness and maturity, the texture of the fruit, and the degree of freedom from core material.

(b) Ascertaining proportion of core. "Core" means core material which may be definitely identified as hard and characteristic of the center structure of pineapple. In ascertaining the proportion of core, identify and separate any core material cleanly from each of the units in the container, weigh the aggregate of

such core material, and calculate the weight of the core material in relation to the drained fruit.

(c) (A) classification. Sliced, half sliced, broken sliced, tidbits, chunks, cubes, spears, or crushed canned pineapple that possesses a good character may be given a score of 27 to 30 points. Half sliced or broken sliced canned pineapple that scores 27 to 30 points shall not be graded above U. S. Grade C or U. S. Standard, regardless of the total score for the product (this is a partial limiting rule). "Good character" has the following meanings with respect to the following styles of canned pineapple:

(1) Sliced; half sliced; broken sliced. The units are of practically uniform ripeness, are at least reasonably firm with the fruitlets appearing as a compact structure, are reasonably free from porosity; and not more than 0.4 ounce of core is contained in 1 pound of drained fruit.

(2) Tidbits; cubes; spears; crushed. The units are of practically uniform ripeness, the fruitlets appear as a compact structure, the units are reasonably free from porosity; and not more than 0.4 ounce of core is contained in 1 pound of drained fruit.

(3) Chunks. The units are of practically uniform ripeness, the fruitlets appear as a compact structure, the units are reasonably free from porosity, and the units are practically free from any core material.

(d) (B) classification. Sliced, half sliced, broken sliced, tidbits, chunks, cubes, spears, or crushed canned pineapple that possesses a reasonably good character may be given a score of 24 to 26 points. Half sliced or broken sliced canned pineapple that scores 24 to 26 points shall not be graded above U. S. Grade C or U. S. Standard, regardless of the total score for the product (this is a partial limiting rule) ; and other styles of canned pineapple that fall into this classification shall not be graded above U.S. Grade B or U.S. Choice, regardless of the total score for the product (this is a limiting rule). "Reasonably good character" has the following meanings with respect to the following styles of canned pineapple:

(1) Sliced; half sliced; broken sliced. The units are of reasonably uniform ripeness, the fruitlets are reasonably compact in structure, the slices are fairly free from porosity; and not more than

1.1 ounces of core is contained in 1 pound of drained fruit.

(2) Tidbits; cubes; spears; crushed. The units are of reasonably uniform ripeness, the fruitlets are reasonably compact in structure, the units are fairly free from porosity; and not more than 1.1 ounces of core is contained in 1 pound of drained fruit.

(3) Chunks. The units are of reasonably uniform ripeness, the fruitlets are reasonably compact in structure, the units are fairly free from porosity; and not more than 1.1 ounces of core is contained in 1 pound of drained fruit.

(e) (C) classification. Half sliced or broken sliced canned pineapple that possesses a fairly good character may be given a score of 21 to 23 points. Half sliced or broken sliced canned pineapple that scores in this classification shall not be graded above U. S. Grade C or U. S. Standard, regardless of the total score for the product (this is a limiting rule). "Fairly good character" has the following meaning with respect to, and applies only to, the following styles:

The

(1) Half sliced; broken sliced. units are of fairly uniform ripeness, the fruitlets are fairly compact in structure, the units are fairly free from porosity; and not more than 1.1 ounces of core is contained in 1 pound of drained fruit.

(f) (SStd) classification. Canned pineapple that fails to meet the applicable requirements of paragraph (d) or (e) of this section may be given a score of 0 to 20 points and shall not be graded above Substandard, regardless of the total score for the product (this is a limiting rule). Any style of canned pineapple in which more than 1.1 ounces of core is contained in 1 pound of drained fruit is also "Below Standard in QualityGood Food-Not High Grade" or "Below Standard in Quality-Poorly cored" or "Below Standard in Quality-Excessive core."

LOT INSPECTION AND CERTIFICATION § 52.1726 Ascertaining the grade of a lot.

The grade of a lot of the processed product covered by these standards is determined by the procedures set forth in the regulations governing inspection and certification of processed fruits and vegetables, processed products thereof, and certain other processed food products (88 52.1 to 52.87).

Frozen pineapple is prepared from the properly ripened fruit of the pineapple plant (Ananas sativus or Ananas comosus); is peeled, cored, trimmed, and washed; may be packed with or without packing media; and is frozen and stored at temperatures necessary for the preservation of the product.

§ 52.1742 Styles of frozen pineapple.

(a) Whole slices. Frozen whole slices of pineapple consist of whole, practically unbroken slices of pineapple that have been cut, at a right angle to the longitudinal axis, into approximately equal units.

(b) Half slices. Frozen half slices of pineapple are such portions of whole slices of pineapple that are so matched in size and thickness that two portions are approximately equivalent to a slice. (c) Broken slices. Frozen broken slices of pineapple consist of portions of slices of pineapple, if such portions are approximately of the same thickness and diameter.

(d) Crushed. Frozen crushed pineapple is pineapple that has been cut, shredded, or crushed into fine pieces.

(e) Tidbits. Frozen tidbits of pineapple are small, wedge-shaped sections cut from slices or portions of slices of pineapple.

(f) Chunks. Frozen chunks of pineapple are pieces of pineapple which do not conform to any of the foregoing styles, which need not be symmetrical nor uniform in size, and which do not exceed 11⁄2 inches in any dimension. § 52.1743 Grades of frozen pineapple.

(a) "U.S. Grade A" or "U.S. Fancy" is the quality of whole slices, crushed, tidbits, or chunks that possess a practically uniform, bright, characteristic yellow color in the applicable style; are practically uniform in size and symmetry in the applicable style; are practically free from defects in the applicable style; possess a good character in the applicable style; possess a normal flavor and odor; and score not less than 90 points when scored in accordance with the scoring system outlined in this subpart.

(b) "U. S. Grade B" or "U. S. Choice" is the quality of whole slices, crushed, tidbits, or chunks that possess a reasonably uniform, good, characteristic yellow color in the applicable style; are reasonably uniform in size and symmetry in the applicable style; are reasonably free from defects in the applicable style; possess a reasonably uniform, reasonably good character in the applicable style; possess a normal flavor and odor; and score not less than 80 points when scored in accordance with the scoring system outlined in this subpart.

(c) "U.S. Grade C" or "U.S. Standard" is the quality of half slices and broken slices that are fairly uniform in size and symmetry; possess a fairly uniform, fairly good, characteristic yellow color or better color; are fairly free from defects; possess a fairly good character; possess a normal flavor and odor; and score not less than 70 points when scored

in accordance with the scoring system outlined in this subpart.

(d) "U. S. Grade D" or "Substandard" is (1) the quality of whole slices, crushed, tidbits, or chunks that fail to meet the requirements of "U. S. Grade B" or "U. S. Choice"; or (2) the quality of half slices or broken slices that fail to meet the requirements of "U. S. Grade C" or "U. S. Standard."

FACTORS OF QUALITY

§ 52.1744 Ascertaining the grade.

(a) The grade of frozen pineapple is determined immediately after thawing to the extent that the mass or units may be easily separated. The grade of frozen pineapple may be ascertained by considering, in addition to the requirements of the respective grade, the following factors: Color, uniformity of size and symmetry, absence of defects, and character.

(b) The relative importance of each factor is expressed numerically on the scale of 100. The maximum number of points that may be given for each factor is:

(b) (B) classification. Whole slices, crushed, tidbits, or chunks that possess a reasonably uniform, good, characteristic yellow color, may be given a score of 16 or 17 points. Frozen pineapple that falls into this classification shall not be graded above "U. S. Grade B" or "U.S. Choice," regardless of the total score for the product (this is a limiting rule). "Reasonably uniform, good, characteristic yellow color" means that the frozen pineapple may have considerable variation of such color in the mass or of the units.

(c) (C) classification. Half slices or broken slices that possess a fairly uniform, fairly good, characteristic yellow color or better color may be given a score of 14 or 15 points. Frozen pineapple that falls into this classification shall not be graded above "U. S. Grade C" or "U.S. Standard," regardless of the total score for the product (this is a limiting rule). "Fairly uniform, fairly good, characteristic yellow color," means that the individual units of the frozen pineapple may vary markedly from a uniform, typical yellow color and may be slightly dull in color.

(d) (SStd) classification. Frozen pineapple that possesses a grayish cast or is definitely dull or off-color for any reason, or that fails to meet the requirements of paragraphs (a), (b), or (c) of this section for the applicable style may be given a score of 0 to 13 points and shall not be graded above "U. S. Grade D" or "Substandard", regardless of the total score for the product (this is a limiting rule).

§ 52.1747 Uniformity of size and sym

metry.

(a) General. The factor of uniformity of size and symmetry shall not be scored when grading frozen crushed pineapple or frozen chunks of pineapple. The other three factors shall be scored and the total shall be multiplied by 100 and divided by 80, dropping any fractions, to determine the total score.

(b) (A) classification. If the frozen pineapple units are practically uniform in size and symmetry, a score of 18 to 20 points may be given. "Practically uniform in size and symmetry" has the following meaning with respect to, and applies only to, the following styles of frozen pineapple:

(1) Whole slices and tidbits. All of the units within each style are the same apparent thickness, size, and shape, with

not more than a slight deviation in actual dimensions.

(c) (B) classification. If the frozen pineapple units are reasonably uniform in size and symmetry, a score of 16 or 17 points may be given. Frozen pineapple that falls into this classification shall not be graded above "U. S. Grade B" or "U. S. Choice," regardless of the total score for the product (this is a limiting rule). "Reasonably uniform in size and symmetry" has the following meaning with respect to, and applies only to, the following styles of frozen pineapple:

The

(1) Whole slices and tidbits. units within each style may vary in thickness, size, and shape with more than a slight deviation in actual dimensions.

(d) (C) classification. If the frozen pineapple units consist of half slices or broken slices, a score of 14 or 15 points may be given. Frozen pineapple that falls into this classification shall not be graded above "U.S. Grade C" or "U. S. Standard," regardless of the total score for the product (this is a limiting rule).

(a) General. The factor of absence of defects refers to the degree of freedom from blemished units; from excessively trimmed units; from broken units; and from crushed units. (See Table No. I of this subpart.)

(1) "Blemished units" are units of frozen pineapple with any fruit eye more than 32 inch in diameter, deep fruit eyes regardless of area, brown spots, peel, bruise, or other injury.

(2) "Excessively trimmed units" means that the units have been so trimmed that they do not retain their apparent original conformation.

(3) "Broken units" means that whole slices are definitely severed from core hole to perimeter.

(4) "Crushed except for crushed style, means that the units have been crushed to the extent that they are not of normal shape.

(b) (A) classification. Frozen pineapple that is practically free from defects may be given a score of 27 to 30 points. "Practically free from defects" has the following meaning with respect to, and applies only to, the following styles of frozen pineapple:
