Paris green, therefore, should be sold under a guarantee that it contains not less than 50 per cent. of arsenious acid, as at this strength there would be no doubt as to its efficacy if used at the strength advocated by the Department, viz., 1 lb. to 160 gallons of water. As it is probable that there will be a considerable demand for Paris green next season, the Department has taken steps to advise the wholesale chemists in Sydney of the importance of selling this chemical at the required strength.

BUBBLES IN HONEY.

In reply to a correspondent who submitted samples of honey showing bubbles, the Department advised that these bubbles were the result of fermentation caused by its being capped before it had thoroughly ripened, and that this result was rather unusual. When a colony is fairly supplied with winter storage, and winter dwindling sets in rather earlier than the bees expected, until there is not a sufficient number of inmates to cause the necessary evaporation, the appearance of these gaseous bubbles is sure to result. If the honey be extracted and exposed to the direct influence of the sun, but covered with mosquito-netting, so as to keep bees and other insects therefrom, it will soon ripen and be fit for use. There is nothing deleterious in honey showing these bubbles.

SPLITTING OF FRUIT.

ANSWERING an inquiry as to the cause of the skin of fruit splitting, it was explained that this was caused by a sudden rapid increase in the growth of the fruit which is not accompanied by a corresponding growth of the skin. This often takes place when rain falls after a long dry spell, during which the natural growth of the fruit is checked. The remedy, therefore, is to apply water to the trees when it is seen they are beginning to suffer from drought, and so maintain a constant and regular growth of the fruit.

PRESERVING AND PICKLING TOMATOES.

To preserve Tomatoes.-Pick some good sound tomatoes, sufficient to fill the jars it is intended to use. Cover with water, then stand the jars in a boiler and fill up with cold water; allow them to boil till tender.

To pickle Tomatoes.-Four quarts of green tomatoes, half a cup of salt. 3 pints white vinegar, 2 oz. of whole ginger. Slice the tomatoes and sprinkle with salt, and leave for twenty-four hours. Then pour off the water, add the other ingredients, and boil all together until tender, and bottle off for use.
